My heart beets

Beets or The Blood Turnip (I love saying that) as I affectionately call them. Don’t worry the red-purple colour is a pigment from the presence of betacyanin…..say that three times fast! Basically it’s a powerful antioxidant that promotes the function of the liver. Okay enough of the betacyanin. I’ve never attempted the famous Russian borscht soup, but I’ve roasted them and sliced them thin. I’ve also enjoyed the leaves in a nice salad. So roast them, preserve them or serve them raw. Experiment and make your heart beat for beets! I must say this Roasted Beet and Avocado Salad is addictive….

For the love of the gourd – Squash and gourd soup recipes

Fall season is approaching and gourds and squash will be in season soon. Let me first say that gourds and squash are healthy and versatile. Even better, gourds and squash are fairly inexpensive and go a long way in a dish. I usually pay $4 for a large butternut squash. So in today’s day of cost-cutting and trying to find ways to eat healthy yet keeping your grocery bill down, squash just seems to make sense. I thought I would post two of my favorite squash soup recipes. So enjoy! I should be posting some more soon. Also be sure to check out some of my gourd photography from last year – that is, if you’re into gourds like I am. They’re all too cute with their unique little bumps and curls.
