Whatever-you-have Salmon salad
This is a great light and tasty lunch and low carb as always. Feel free to substitute ingredients for whatever you have keeping in mind there needs to be a little crunch happening. Keep your ingredients finely diced. You could also serve this on some nice Butter lettuce leaves.
1 can of sockeye-salmon (or leftover cooked, fresh altlantic salmon filets)
1 cup finely chopped swiss chard or lettuce
1/2 cup finely diced carrots (or one or two baby carrots)
1/2 cup finely diced onions
1 finely diced red radish
1/2 cup finely diced celery
1/2 cup finely diced cucumber (or you could use pickles)
4 fresh basil leaves finely chopped
3 tbsps mayonaise
1/4 tsp paprika
1 tbsp olive oil
Freshly squeezed lemon juice
Salt and pepper to taste.
Mix all ingredients in a bowl and serve.
