Basically it&#8217;s a powerful antioxidant that promotes the function of the liver. Okay enough of the betacyanin. I&#8217;ve never attempted the famous Russian borscht soup, but I&#8217;ve roasted them and sliced them thin. I&#8217;ve also enjoyed the leaves in a nice salad.  So roast them, preserve them or serve them raw. Experiment and make your heart beat for beets! I must say this <a href="http://www.jennifermccormick.com/black-bean-salad-from-bite-me/my-heart-beats-for-beets"><strong>Roasted Beet and Avocado Salad</strong></a> is addictive&#8230;.<br />
